This subtle green tea gives a sparkling pale green infusion that has a genteel aroma of peaches ripening in spring .  

 

Pre-heat your pot for about a minute with boiling water then discard this water. Scoop a teaspoon of tea per cup and place it in the heated pot. Bring water to a boil for a few seconds allow the boiling water to cool for a few minutes (about 180 F) and then pour it over tea leaves. Brew for 4-5 minutes. If you prefer you may add a twist fresh lemon. Strain and serve.
